???? The home nightmare

We received a notice back (which is what has to happen when you are given a summons)....from the people living in our house. Their 'back' stated the following:
"We (Steve and I) are not owners of the property." [Then why is our name on the deed?]
They AGREE that they are residents of the property.
They disagree that we have a written agreement.....[Then what is that document they signed?]
Agreed that they were served a 5 day notice, but disagree that they got a copy of that notice. ???
Disagree that they did not compy with the notice. [It was a 5 day vacate the premisis notice--and they are still there, so how can they disagree???]
Disagree that we are entitled to remove them for non payment.
Disagree that they have caused any 'loss' or damage to the property.
Disagree that we can have the rents trebled (Utah law) for every day they stay there past the 5 days.
Their lawyer wrote up all of the above.
Doesn't make sense to me.
However, it scares me to 'death', and can'tlet me sleep. Mainly because I have heard SEVERAL lawyers say that Utah has many idiots, and most of them wear 'black robes'.
I guess the worst thing that could happen is that the judge would give the home to the Ures, and, in that case, we would just quit paying the housepayment, and let the property foreclose--which would be a huge sadness.......
Pray for us, please.

Grandma Jo's prayers were answered

When Grandma Jo was taking care of her sister, Edith, when Edith way dying.....Edith was so thirsty, but mom couldn't get her to sit up enough to drink from a cup--because Edith was in too much pain. Mom went to her drawer where she keeps a few straws, looked all the way through, but could only find straight straws. She tried holding the cup down, bending the straw, etc., but nothing would work. Now, mom doesn't live in a place where you can run to an all night Walmart and buy some straws with those flex bend spots in them. Edith was so miserable and so thirsty. Mom prayed for just one bendable straw for the comfort of her sister. She went back out to the same drawer, and there, sitting right on top was ONE bendable straw. Mom knows it was not there before. A direct, and tangible answer to her prayers. And--it worked, and Edith was able to get a moments peace, which was such a comfort. A true, modern day miracle.

Funny

Michael came by with the car loaded to the hilt, kids in the back, stuff strapped on the top, Annie at the Grocery store, etc., as they were ready to go camping. He looked a little harried, as the tarp covering the things on top wasn't cooperating. He said, "It would be lots easier to just go to work."
Camping vacations ARE a ton of work, especially if you are taking small children along......Exhausting, especially for the dad with all the car packing, and the mom with all the food stuff, the clothes and dishes packing, and the child care. Why do we do this to ourselves?
Oh, yea.......it's fun once you are there and the camp is set up!!! I remember.

Salt Rising Bread

For those of you who want to experiment making bread with no yeast involved.......(it takes a lot longer.......but it is at least possible........!!)
INGREDIENTS
1 cup milk
1/2 cup cornmeal
1 tablespoon white sugar
1 teaspoon salt
2 cups warm water (110 degrees F/45 degrees C)
2 cups all-purpose flour
2 tablespoons white sugar
3 tablespoons shortening
1/2 teaspoon baking soda
1 tablespoon warm water (110 degrees F/45 degrees C)
6 cups all-purpose flour

DIRECTIONS (in the 'olden days' people would set this on the back of their wood stoves to warm...we have to be more creative today).......
To Make Starter: Heat the milk and stir in 1 tablespoon of the sugar, the cornmeal and 1 teaspoon of the salt. Place this in a jar in an electric skillet or crock pot with hot water in it. Maintain the temperature around 105 to 115 degrees F (40 to 47 degrees C) for 7-12 hours or until it shows fermentation. You can hear the gas escaping when it has fermented sufficiently. The bubble foam, which forms over the starter, can take as long as 24 hours. Do not go on with the bread-making until the starter responds. As the starter ferments, the unusual salt-rising smell appears.
To Make The Sponge: In a medium-sized bowl add 2 cups of the warm water, 2 tablespoons of the sugar, the shortening and 2 cups of the all-purpose flour to the starter. Beat the sponge thoroughly. Put bowl back in the water to maintain an even 105 to 115 degrees F (40 to 47 degrees C) temperature. Cover and let rise until light and full of bubbles. This will take 2 1/2 to 3 hours.
Dissolve the baking soda in 1 tablespoon of the warm water and combine it with the sponge. Stir 5 1/4 cups of the flour into the sponge; knead in more flour as necessary. Knead the dough for 10 minutes or until smooth and manageable. Cut dough into 3 parts. Shape dough and place it in three greased 9x5x3 inch pans. Place covered pans in warm water or uncovered pans in a warm oven with a bowl of hot water, maintaining a temperature of 85 degrees F (30 degrees C). It will take approximately 5 hours for the bread to rise 2 1/2 times the original size. The bread will round to the top of the pans.
Preheat the oven to 375 degrees F (190 degrees C).
Bake bread at 375 degrees F (190 degrees C) for 10 minutes. Reduce oven temperature to 350 degrees F (175 degrees C) and bake for an additional 20 minutes or until light golden brown. YOU CAN DRY SALT RISING CULTURE!!! Save 1/4 cup of a successful sponge and pour it into a saucer, cover with cheesecloth and allow to dry. Store dried flakes in plastic in a cool, dry place or freeze until needed for salt rising bread. When ready to make the bread; dissolve the flakes in the new warm starter and continue with recipe. This will give a flavor boost to your bread.
